marinated olives

O.M.G. have you ever eaten warm olives?? They are SO delicious!! I absolutely loved them and hope you do too!!  I heated up some olive oil with fresh thyme, fresh rosemary, garlic, lemon zest, a pinch of salt, and VOILA, marinated olives with citrus! You can use your favorite herbs or whatever you have on hand.  If you don’t have a lemon, lime or orange would be good too!

Don’t toss out the leftover oil when the olives are gone, you can totally use it on a salad, in some soup or drizzle it over some pasta, YUM!


Ingredients:

1 cup olives, I used cerignola

1/4 cup of olive oil

1 sprig of fresh rosemary

2 sprigs of fresh thyme

1 clove garlic

1-2 tbsp lemon zest, about one lemon

1 tbsp lemon juice

Directions:

Put all of the ingredients in a pan and heat on medium until the oil is hot but not boiling.  Add the olives and let them sit in the oil for a few minutes.  Turn off the heat and add the lemon juice. Pour everything into a bowl and serve warm.  Enjoy!
