kung pao meatballs

These Kung Pao meatballs are inspired from these and are SO good!! I used ground beef and had some jasmine broken rice I wanted to try so it was a win win!  The sauce was a perfect amount of spice and the rice was a great side dish. I topped it with some sliced green onion and black sesame seeds. DELICIOUS!!

Ingredients:

1 lb ground beef

1 egg

1/4 cup of brown rice flour

1 tbsp sriracha sauce

1/2 tsp salt

Sauce:

4 tbsp sweet chili sauce

2 tbsp sriracha

4 tbsp coconut aminos

Mix the sauce ingredients together and set aside.

Directions:

Place the meat, egg, sriracha, salt and flour together in a bowl and mix to incorporate.  Using either your hands a spoon or small scoop make the meatballs (about 21) and place them on a sheet tray.  Bake at 400 until done, about 20 minutes.  Drizzle with the sauce and serve with a side of your choice. YUM!!
