chocolate chip cookies

These almond butter chocolate chip cookies are super quick and easy to make! If you don’t have almond butter you could use cashew, peanut or pecan butter.  For the sweetener I used sweetened coconut condensed milk because that’s what I had on hand. Maple syrup or coconut nectar would be a perfect substitution.  If you wanted something crunchy you could add chopped nuts or even cacao nibs instead of chocolate chips, YUM!!


1/2 cup of almond butter

1/4 cup of sweetened coconut condensed milk or sweetener of your choice

1 cup of almond flour

1 tbsp coconut flour

1/4 tsp baking soda

1/2 cup chocolate chips

1/2 tsp vanilla

1/2 tsp salt


Preheat oven to 350.

Mix the almond butter, coconut condensed milk, vanilla, and salt together until smooth.  Add the flours, baking soda, salt, chocolate chips and stir to combined.  Using a small scoop make 12 cookies and place them on a parchment lined cooking tray.  Bake for about 15 minutes.  Cool for a few minutes before eating. Enjoy!
