balsamic chicken

This balsamic chicken dish came from a cooking competition I was watching and I actually had similar ingredients on hand!! It was a very good dish with interesting flavors! In the original dish they used pomegranate syrup and molasses, I swapped that with balsamic vinegar and molasses, YUM!! I served it over brown rice and topped it with fresh pomegranate seeds!! It was so good!!


1 lb ground chicken

1 onion, diced

1 tomato, diced

1 tbsp balsamic vinegar

1 tbsp molasses

1 tsp coconut oil

juice from 1 lime

pomegranate seeds for garnish


Heat the coconut oil over medium heat in a large pan.

Saute the onion for a few minutes then add the tomato and ground chicken.  Cook until the chicken is done.  Add the molasses and balsamic vinegar, lower the heat and simmer for about 10 minutes so the flavors come together.

Serve over rice and top with the fresh pomegranate seeds and fresh squeezed lime juice.  Enjoy!

    I’ve made this twice for my family. Once I used the molasses and once I used pomegranate syrup. It was delicious both ways. I also used olive oil instead of coconut oil. Just a personal preference.
