apple roll-ups

These apple roll-ups are super tasty! They are a cross between an apple turnover and a sweet spring roll.  The apples are cooked so you could keep them refrigerated until you are ready to use them, then just roll and bake!  If you use large apples you could probably get 6 rolls total.  I like desserts like this cold but did try it hot out of the oven and it was delicious!


2 medium granny smith apples, thinly sliced

2 tsp cinnamon

1 tsp fresh grated nutmeg

1 tbsp maple syrup, or sweetener of your choice

pinch of salt

4 coconut wraps


Heat a sauce pan on medium heat.  Cook the apples, maple syrup, cinnamon, nutmeg and salt for about 15 minutes stirring frequently so the apples get covered in the sauce. When they are fork tender remove them from the heat.

Fill each wrap with the mixture rolling it like a spring roll.  Place the rolls on a pan and bake at 350 for 15 minutes.

Serve hot or cold drizzled with caramel sauce, a sprinkle of powdered sugar, chopped nuts and some whipped cream!! So good!!
